In this recipe, a combination of paprika, salt and pepper intermingles with the mild and delicate flavor of walleye. The dish is garnished with sliced green onions and lemon wedges.
SERVES: 6
PREP TIME: 5 Minutes
COOK TIME: 30 Minutes
Ingredients

1/2 teaspoon paprika
1/4 teaspoon pepper
1/2 teaspoon salt
2 to 2-1/4 pounds walleye fillets (6 oz. each), skin removed
1-1/2 cups milk
Green onions, sliced
Lemon wedges

Directions
Step 1  Step 1:
Preheat oven to 350 degrees F.
 
Step 2  Step 2:
Combine salt, paprika, and pepper in a small mixing bowl. Place fillets in 13 x 9-inch baking dish and sprinkle with seasoning mixture. Pour milk over fish and cover with foil.
 
Step 3  Step 3:
Bake in oven for 30 to 35 minutes, or until fish is firm and opaque and just begins to flake.
 
Step 4  Step 4:
Lift fillets from poaching liquid. Place on serving platter and sprinkle fish with onions and lemon juice.
 

Serving Suggestion: Serve fish with steamed asparagus spears topped with hollandaise sauce and a tossed salad.
