Pork Scaloppine In White-Wine Sauce Pork Scaloppine In White-Wine Sauce
Thin-sliced pork sautes quickly and is complemented by a creamy, herby sauce.
SERVES: 4

COOK TIME: 30 Minutes
Ingredients

1 (1 lb.) pork tenderloin
1/4 teaspoon McCormick Black Pepper, Ground
3 tablespoons whole-wheat flour
4 teaspoons olive oil, divided
2 cloves garlic, mined
1/2 cup dry wine
2 teaspoons McCormick Sage
1 teaspoon McCormick Rosemary Leaves
1 cup reduced-sodium chicken broth
2 tablespoons water
1 tablespoon cornstarch
2 tablespoons snipped fresh parsley (optional)

Directions
Step 1  Step 1:
Trim fat from meat. Cut meat into 1/2-inch slices. Place each slice between two pieces of plastic wrap. Using the flat side of a meat mallet, pound meat lightly until 1/4 inch thick. Remove plastic wrap. Sprinkle meat with pepper. Place flour in a shallow dish. Dip meat into flour, turning to coat evenly.
 
Step 2  Step 2:
Heat 2 teaspoons oil in a very large skillet over medium-high heat. Add half of the meat to the pan. Cook about 4 minutes or until meat is browned, turning once halfway through cooking. Remove meat from pan; cover and keep warm.
 
Step 3  Step 3:
Add the remaining 2 teaspoons oil to the pan; cook the remaining meat as directed above. Remove from the pan; cover and keep warm.
 
Step 4  Step 4:
Add garlic to the same pan; cook and stir for 30 seconds. Add wine (or broth), sage and rosemary; cook and stir for 2 minutes. Add broth; return meat to pan. Bring just to boiling. Cook, uncovered,
 
Step 5  Step 5:
Transfer meat to serving plates; top with sauce. If desired, sprinkle with parsley.
