You will love the incredibly delicious flavor of this braised beef dish.

PREP TIME: 10 Minutes
COOK TIME: 120 Minutes
Ingredients

1 Chuck Roast, 2-1/2 to 3 pounds
1/4 cup all purpose flour
2 tbsp. light olive oil
1-1/2 cups water
1/4 cup balsamic vinegar
2 small onions, cut in half and sliced
4 medium shallots, sliced
1/4 cup chopped pitted dates
1/2 tsp. salt
1/4 tsp. pepper

Directions
Step 1  Step 1:
Heat oven to 325 degrees.
 
Step 2  Step 2:
Lightly coat chuck roast with flour.
 
Step 3  Step 3:
In Dutch oven, heat oil over medium heat. Add roast; cook, turning occasionally, 5 to 8 minutes or until browned on all sides. Remove roast from pot.
 
Step 4  Step 4:
Add water and vinegar to pot. Cook, stirring constantly, 4 to 5 minutes or until browned bits attached to bottom of pan are dissolved. Return roast to pot. Add onion, shallots, dates, salt and pepper; bring to a boil. Cover tightly.
 
Step 5  Step 5:
Bake 2 to 2-1/2 hours or until chuck roast is fork-tender. Remove roast from pot; keep warm.
 
Step 6  Step 6:
To make sauce, cook liquid and vegetables over medium-heat until slightly thickened or desired consistency. Carve pot roast; serve with sauce.
